Paal is a village wine made from a single variety, the syrah, in San Martin de Unx and shows the utmost varietal expression of a grape grown in a mountainous area.

Soil: Clay with pebbles. Poor soils that guarantee limited yields.

Grape: Syrah

Vinification & aging: Pre-fermentation cold maceration (cold soak). Low- temperature. fermentation in concrete tanks. Malolactic fermentation in concrete tanks. Aged for 15 months in concrete tanks.

Did you know that: Although Syrah is considered a recently introduced variety in the Iberian Peninsula, there is a bibliography in which the growing of this grape in Northern Navarre was already recommended in 1915 (Apuntes de Viticultura y Enología, Nicolás García de los Salmones, 1915). It is not strange to think that being Navarre a transit path between France and Spain, it could have been cultivated much earlier than we think
