Soil: Clay with pebbles. Poor soils that guarantee limited yields.
Grape: Syrah
Vinification & aging: Fermentado en depósitos de cemento. Envejecimiento de 18 meses en depósito de cemento y 15 meses de botella.
Pre-fermentation cold maceration (cold soak). Low- temperature. fermentation in concrete tanks. Malolactic fermentation in concrete tanks. Aged for 18 months in concrete tanks and fined for 15 months in bottle.
Did you know that: Although Syrah is considered a recently introduced variety in the Iberian Peninsula, there is a bibliography in which the growing of this grape in Northern Navarre was already recommended in 1915 (Apuntes de Viticultura y Enología, Nicolás García de los Salmones, 1915). It is not strange to think that being Navarre a transit path between France and Spain, it could have been cultivated much earlier than we think
